Air Fried Porterhouse Pork Chops w/ Bacon Brussels Sprouts
This is an easy to make delicious meal that is very filling, and VERY Keto friendly. Not every supermarket carries Porterhouse cut pork chops, but most will gladly cut them for you. If you have a butcher shop near your home, it's definitely worth a visit to grab a few of these. At a fraction of the cost of Beef Porterhouse cuts, these are also wallet friendly. Brussels Sprouts are a very healthy pairing to any pork (or any meat really), and they are packed with nutrients. When cooked with bacon, you get that extra kick of fat needed for a solid Keto diet.

- Pork Chops - 2 x 16oz Porterhouse Cut
- Bacon - 16oz Butcher Cut
- Brussels Sprouts - 2lb Sliced and Washed
- Seasoning - 2-3tbsp (Pick your favorite steak seasoning)
- Salt & Pepper - 2-3 pinches to taste
Instructions
The star of the dish: Porterhouse Pork Chops
Start out by leaving the pork chops out for about 5-10 minutes so they are closer to room temperature. Make sure they are covered with foil or plastic wrap. Pat them dry, and give them a generous rub of your favorite seasoning. You can use almost any seasoning that you are in the mood for...steak seasonings work very well. Let it rest for another 10 minutes before cooking so the seasoning starts tenderizing, and flavoring the meat. Trust me...it's worth the wait! I used my trusty Gourmia 6qt Air Fryer. A bigger air fryer will work best here, but you can probably tuck 2 of them in a smaller one. You are going to cook these pork chops for 25 minutes, at 360 degrees. As tempting as it is to blast them at 400, these are very thick, and you want to ensure they are cooked through without charring the outside. Flip them once about half way through to get an even crust on both sides.
The Supporting Cast: Bacon Brussels Sprouts
Once the Pork Chops are in the Air Fryer, start rendering the bacon fat down in a large cast iron skillet. If you do not have one, any deep dish skillet (12" 4-5qt) will work. I recommend a cast iron skillet for this type of cooking because the bacon fat is a fantastic seasoning for it, and they cook very evenly (and they last forever). I use a Lodge 12" Cast Iron Skillet that is my primary go-to bacon cooker :). These are heavy, so handle with care. The Brussels Sprouts cook fast, so hold off on adding them to the bacon until the bacon is almost crisped up. Once the bacon is crispy, and there is a generous amount of bacon fat, add the Brussels Sprouts to the skillet, and mix it well. Try not overcook the sprouts (cook for about 4-5 minutes). They taste fantastic with a little crunch to them. Add Salt & Pepper to taste, and serve in a family style dish.
