Keto Coconut Flour Waffles
One of the tough things about Keto is not being able to eat those breakfast goodies like waffles! No worries....this coconut flour waffle recipe will definitely scratch that itch, and it's easy to make and VERY tasty!
With just a few ingredients you will be on your way to enjoying a hearty breakfast...and like Klo likes, a bacon, egg and cheese waffle sandwich 🙂
Ingredients
- Unsalted butter - 1/4 cup melted
- Sour cream - 1/4 cup
- Salt - 1/4 teaspoon
- Eggs - 3
- Vanilla extract - 1/2 teaspoon
- Coconut flour - 1/4 cup
- Baking powder - 1/2 teaspoon
- Water - 3-4 tablespoons
Instructions
In a bowl, mix together the dry ingredients (flour and baking powder). Next, is another bowl, mix together all remaining ingredients. Whisk together both bowls ingredients into one.
Add water to thin the waffle batter (I added approximately 3-4 tablespoons, 1 at a time).
Preheat your single serve waffle maker. I used the Dash Express Mini Waffle Maker, which makes the perfect size waffles for breakfast sandwiches.
Pour 1/2 cup of waffle batter into the the mini waffle maker each time.
The mini waffle maker will auto shut off when the waffle is ready (blue light at the top).
This recipe made 8 mini waffles.
