Keto Seafood Alfredo Zoodles
Zoodles (Zucchini Noodles) can look so intimidating to cook as dishes often turn watery and tasteless. I have found the perfect Zoodle recipe that anyone can make in the air fryer...YES, I said air fryer!
Add some Trader Joe's frozen seafood blend and Prego Alfredo sauce and you've got yourself a delish meal in under an hour.
Drain the zoodles first to get rid of the water -- place them in a strainer and sprinkle about a teaspoon of salt on them. This will help drain more of the water out. Let them drain in the strainer for 20 minutes. After 20 minutes, squeeze out as much water as possible with your hands and pat dry with a paper towel (this step is very important)
Mix the zoodles in a bowl with 1/2 tablespoon of olive oil.
Place the zoodles in the air fryer, 400 degrees for 6-7 minutes - make sure you shake the zoodles every couple of minutes so they cook evenly, and do not burn/crisp up.
While the zoodles are cooking, add 1/2 tablespoon of olive oil to a hot skillet (I prefer a cast iron skillet) and add the frozen seafood blend (I bought mine at Trader Joe's, but any will do). Cook for 3-4 minutes on high heat or until shrimp is pink and calamari is opaque.
In the same skillet (now dry and free of seafood juice), add the finishing butter and alfredo sauce and heat through. Once heated, add the seafood blend and cook for another minute so the sauce incorporates into the seafood.
Lastly, add salt, pepper and hot pepper to taste (I added a tiny bit of dry parsley too).
Once your zoodles are done, nest them on a plate and add your alfredo seafood blend on top.
Garnish with a Parmesan crisp or shaved Parmesan and ENJOY!
